Eggplant & Sweet Potato Burgers

This is a classic recipe. We prefer this burger’s texture and taste over any other veggie burger. And… it’s so easy!

Start with an eggplant. Also known as an aubergine.

I think food is just so beautiful. The Creator is so good to us. Cube and sauté this in a little bit of oil.

While this is cooking, start boiling your sweet potato. {This is the only time I choose boiling over baking or steaming.}

The original recipe is found at Skyline Empire. I stumbled upon this on Pinterest. It originally calls for an egg, but I made a flax egg instead. The basic ratio for a flax egg is 1 tablespoon of ground flax seeds mixed with 3 tablespoons of water.

Go ahead and mix the flax egg. You need to let it rest for 5 minutes or so. When the eggplant and sweet potato are soft, mash them together in a large bowl.

Add a teaspoon of salt and a teaspoon of oregano. Stir in a cup of flour. We used spelt flour.

This is when you will add the flax egg. See how it gets super yolky? It’s a great binder.

Stir all of this together. It’s going to be a mostly wet dough. Form medium sized patties.

I sprayed a little bit of olive oil in a pan, and grilled them for about 4 minutes on each side.

This recipe made 10 burgers for us! TEN! A super cheap, easy, and more importantly… healthy dinner. With plenty for leftovers!
