Healthy Chocolate Mousse

In the winter it never fails that I want chocolate mousse. It may have something to do with it being chocolate. And delicious. This recipe is healthy, protein-packed, and light. And it’s chocolate. Need I say more?

The base of this dessert is silken tofu. It’s not like firm tofu. It’s smooth and creamy. Just make sure you get organic!

Scoop the 16 ounce package into your blender. Go ahead and add in a teaspoon of vanilla, an 1/8 teaspoon of salt, and a couple tablespoons of almond milk.

Now the best part. Chocolate chips. {We use the Ghiradelli semi-sweet. No dairy in these beauties.}

Now gently melt the chocolate. I like to use a silicone spatula to stir, then to transfer. No need to waste ANY chocolate.

Add the melted chocolate to the blender. Add in just a teaspoon of cocoa powder.

Now blend all of this together. Transfer to a baking dish of some sort or straight into serving cups. Chill in the refrigerator for at least half an hour.

Perfect. Fresh raspberries or blueberries suit this dessert just fine.
